NATALIA’S VEGAN QUINOA CAKES

 

The flavor of this dish reminds me of eastern European flavors, with the addition of the delicious quinoa. Check out awesome benefits of quinoa that our friends at Cooking Detective put together HERE.

INGREDIENTS:

1 cup cooked quinoa (I used red for this recipe)

1 can garbanzo beans, rinsed

1 teaspoon garlic powder

1 teaspoon sea salt

1 teaspoon 21 Seasoning salute (seasoning from Trader Joes)

½ teaspoon paprika

¼ medium size onion

EVOO – extra virgin olive oil

 

TOOLS:

Food processor

Sauté pan

Mixing bowl

Spatula

 

METHOD:

1. Lightly sauté onions in EVOO

2. Combine onions, garbanzo beans and all seasonings in a food processor, pulse until well mixed

3. Fold in the quinoa

4. Form into small cakes

5. Sauté in EVOO 1-2 minutes on each side
