Tuscan Avocado Toast

This delicious avocado toast has been a huge hit not only with my family, but with friends and my students. It reminds me of Italy with the addition of pine nuts and fragrant basil. Hope you enjoy this as much as we all do!

1 avocado

1 tablespoon toasted pine nuts

1 teaspoon Extra Virgin olive oil

pinch of Himalayan pink salt

5-6 San Marzano or small tomatoes

3-4 basil leaves

balsamic glaze

2 slices of toast (I prefer gluten free)

directions:

1. mash avocado in a bowl with a fork, add salt, pine nuts and olive oil

2. shiffonade the basil leaves

3. slice tomatoes

4. on a toast assemble:  avocado mixture, basil, tomatoes, top with balsamic glaze
