Spiralized Apples: 3 Healthy Fun Recipes

1. HOMEMADE APPLE CHIPS:
We can cut the spiralized apples in half or quarters, sprinkle some coconut palm sugar and cinnamon on, place slices on the dehydrator sheets and – voila, you have homemade apple chips. Or bake them on a parchment lined cookie sheet on a super low temp – around 200 F for about an hour and a half to two hours (depends on the thickness of the slices you have) Store in a paper bag.
2. APPLE BLUEBERRY OVERNIGHT OATS
Perfect for busy people who are always on-the-go
DRY INGREDIENTS:
· 1 cup Bob’s Red Mill muesli
· 1 apple, spiralized and chopped
· ½ cup frozen wild blueberries
· 2 T chia seeds
Mix everything in a bowl
LIQUIDS:
To the blender add:
· 1 cup coconut (or almond) vanilla yogurt
· ¼ cup almond milk
· ½ cup fresh (or frozen) blueberries
· 1 T honey
· 1/2 t cinnamon
· 1 t vanilla.
· Optional: zest and juice of ½ meyer lemon.
Blend, mix with the dry ingredients. Spoon into jars, let sit overnight. These will be keep for about 3 days.
3. SPIRAL APPLE SLAW SALAD
Makes a great addition to grilled or roasted meats, poultry and seafood. Or enjoy on its own as a salad.
INGREDIENTS:
· 1 spiralized apple
· 1 cup of blueberries
· ¼ cup sliced toasted almonds
· slaw mix (use mix from Trader Joes or any other slaw mix)
Dressing: 1 T organic mayo, 1 T Dijon mustard, juice of ½ lemon, 3 T EVOO, 1 t honey, ¼ t salt. Mix with a whisk, add to the slaw. Refrigerate for 10-15 minutes before eating.
